now lets not get too pretentious about food. for the most part, buffalo food is good honest american food. im not claiming that perogies with onions and sausage is high cusine, but you know what, its damn good.
every celebrity chef goes overseas, and where do they go? to the street vendors, the holes in the wall, to where the locals go. i grew up eating spagitti carbonara, pasta and peas and frittatas. now they cost crazy money at fancy places. just like paella and bouillabaisse were ways to make use of what was on hand for common folks.
