Restaurants come and go. Obviously they can’t all succeed. When people find out about a new restaurant some say “good luck” and others say “I give it a year.” But what’s an idea for a new restaurant that couldn’t possibly fail in Buffalo? In other words, what would be a “can’t-miss” restaurant in Buffalo? Would the key be a particular concept? Some sort of gimmick?

I love ideas about restaurants but you’d never see me open one. First, because I have no capital. Second, because I don’t know how to run a business. But I do love throwing around ideas. What’s the kind of new restaurant that you think would be a perfect fit in Buffalo? What would be on the menu? What kind of atmosphere would it be? Where would it be located?

About ten years ago I had a horrible idea for a restaurant that I would have named “Grubbies.” The concept was to have customers bring in their own CD’s and the restaurant would play what the customers wanted to hear. The name “Grubbies” had nothing to do with the concept--it was just slang that my friends and I used when we were hungry, as in “Let’s go get some grubbies.” I know, I know, it was a ridiculous idea and the restaurant wouldn’t have lasted a week. But I still like to think about ideas for restaurants.

So what’s your idea for a “can’t-miss” restaurant in Buffalo?

    I want to bring back the original Elmwood Soda Bar, that place with the best. I would keep it simple with just great hand formed burgers, fresh cut fries, great milk shakes, ice creams...

    I have always wanted to eat in a restaurant that was not on ground level in Buffalo. I would like to see a restaurant and bar open in a building that overlooks the city and the water. I think there used to be one on the top floor of the HSBC? I know there is a private club that offers these views, and maybe a corporate cafeteria. As far as the food goes, a restaurant like that would need to appeal to the masses and would serve the basics. Pastas, steaks, salads, etc.

    we were just talking about this in class today! Buffalo has all the food choices you could ever want, what more would actually be successful here? We couldn't think of anything...but the soda shoppe, that's a fantastic idea!

    Aren't there enough places going down the tubes as it is? We are going to see a lot of places going bust this winter. I'd put Baccus at the top of the list. Our population is shrinking but yet people like Todd keep opening up new places. The cash that fuled those crazy dreams is gone, gone, gone. Yet a good Mexican place would be welcome.

    If you want a successful restaurant that attracts Buffalonians, then open it in Atlanta, GA and add "authentic Buffalo wings" to the menu. That is a sure hit.

    Good, authentic, delicious Mexican would be a relief.

    Real French is necessary as is a French bakery. So sick of those little tasteless Italian cookies I could die.

    Fast food/drive thru that's good, decent, whole food. We have very few drive thru options here--donuts, boston market, ets/might taco and burgers. There are lots of great drive thru places with fresh food on the west coast.

    Real Spanish food would make my heart happy, but I don't know if Buffalo could keep a place like that busy and open. I know I'd do my best.

    Imaginative high end American classics- hand cut fries with aioli trio, hand-formed grass fed burgers, mac and cheese with class...

    As long as people in Buffalo keep thinking being a vegetarian is cool: Modern fine dining with a commitment to organic/grass-fed/etc and a lot of really top-notch Ubuntu-quality vegetarian options. No all veg restaurant is going to fly in Buff unless it's sandwiches and soups. But a high end joint with good ethics could make a lot of vegetarians very happy by catering to their tastes for better food and still serving the carnivores. Strict kitchen standards would need to be in place here. Don't want your veggie burger grilled in the same spot that Bessie was.

    Anyone brave enough to open a restaurant this year had better have a pretty thick cushion. I fear we'll see a lot of the little guys close in late winter. Hopefully we'll only lose the yucky ones.

    Shame on any WNY resident who visits any chain in this economic climate.

    #1 Can't Miss Restaurant Idea....a Fried Chicken and Waffles place on Elmwood. Buffalo will quickly realize that a chicken is composed of more parts than just the wings and that these parts are also delicious when fried, especially when served with hot, crispy waffles and syrup.

    #2 Can't Miss Restaurant Idea..."Staff Chow" an industry-oriented bar with a late-night menu devoted to the greatest hits of staff chow comfort food.

    #3 Can't Miss Restaurant Idea... this town really needs a place that serves pizza AND subs...

    Bufago - Who is going down the tubes..there are more quality places opening every day. I can never remember so many good options. Don't get me wrong were are a long way from being a major restaurant city, but things are pretty good here. And I'm not sure where you get your info but Bacchus isn't going anywhere, its steady during the week and packed on the weekends and seems to be really well run, one of the best joints in town for sure.

    Clyde - From what I've scene and experinced Atlanta Restaurants blow, Buffalo has it all over than chain saturated mundane culinary vacuum.

    okay you want to know i will. YOU CAN'T REALLY DEFINE A RESTARAUNT FOR A CITY. A Gordon Ramsey place would be good. Also we need a very NYC style metropolitan place. About the other place currently here....HOW HARD IS IT TO MAKE GREAT TASTING QUALITY FOOD. Watch kitchen nightmare on fox on thursdays and you'll see what i mean

    There are amazing restaurants serving great, quality food in the city of Buffalo. Get out there and try one or two. If I lived in the suburbs, I'd agree with you, those chains and mom and pop dinner places (think Grapevine) don't serve food unless its covered in red sauce or comes from a fryer. "Bruschetta chicken"? No thanks. "Buffalo chicken salad". Get me out of here.

    And you're right that there are a lot of restaurants that could use a Ramsay makeover, but you could say that about any city...including New York. The restaurants that are making the right choices night after night don't get enough press and don't always have customers that appreciate what they're doing, but they are out there. And to your point, I think there are quite a few joints that could qualify as a "NYC style metropolitan place". You just need to get out more.

    Oh, and by the way, it is hard to make great tasting quality food in an area full of people who think Chef's is good food, people looking for giant portions of bland re-heated frozen/canned crap for very little money.

    I agree eating, Buffalo does have several restaurants that could hold thier own in manhattan. The problem as you pointed out is that the best ones are often misunderstood. People say they want better restaurants but they don't even support the places that are doing the best work. A few of the busiest white table cloth places are just plain average while a few others have open tables because they are not cool, or packed with right crowd. With that said however as someone else pointed out a quality french bakery would be pretty cool, and a modern breakfast joint downtown too, like brasserie style. Buffalo breakfast joints are pretty ho-hum, how much greek do we really need.
